Chia Pudding

Breakfast can be a tough one. There never seems to be enough time for a healthy meal and instead we’re left grabbing whatever fruit is handy before running out the door… or worse – a coffee. Luckily this chia pudding is super easy to make, doesn’t have a ton of ingredients, aaaaand you get to make it the night before. Don’t worry, it only takes 5 minutes. Did I mention that you can store it in a cute mason jar and take it with you? If you aren’t already sold just give it a one time shot and I promise you’ll fall in love with breakfast all over again.

Chia Pudding

1/4 cup chia seeds
1/4 cup unsulphured shredded dried coconut
1/2 can of unsweetened coconut milk
1/2 tsp cinnamon
1/2 tsp pure vanilla extract
1 tsp raw honey (optional)
1-2 tbsp hemp hearts
handful of goji berries

Spoon your chia seeds into a bowl or mason jar. Add the dried coconut and coconut milk and mix well. Stir in the cinnamon, vanilla, and honey. Place in fridge and let sit overnight.

The next morning… wake up, go to the kitchen, and let out a big smile because all you have to do is sprinkle on some hemp seeds and goji berries and breakfast is served! Feel free to play around with different toppings and superfoods. I like to add a little bee pollen and maca to mine.
