Sometimes you just need something quick and easy, without turning to fast food or processed, packaged nonsense. In case you haven’t noticed, I LOVE salads. They are so versatile, nutrient packed, and you can literally put one together with whatever you have in the fridge and make it taste good. So here’s a simple recipe, for a simple kind of day.
4-6 handfuls of romaine
1/2 an avocado, pitted, and siced
1/4 small red onion, finely diced
1 small tomato, quartered
2 oz organic goat’s cheese, crumbled
1/4 cup EVOO
1/4 balsamic vinegar
squeeze of lemon
big sprinkle of cayenne
big sprinkle of dried oregano
Combine all of the veggies in a bowl, add dressing, and top with the goat’s cheese. I like to sprinkle a little extra cayenne pepper on top. Serves 1.
