I’ve committed to getting in my greens and raw veggie goodness every day for lunch. So what’s a gal to do who’s always on the go? Invent something super quick and easy, but powerful enough to get me through the day. This tasty recipe took 10 minutes to make, and may I say that it left me feeling energized all afternoon! It’s packed with nutrient dense greens, plus chickpeas and sprouts filled with healthy proteins!
4-6 handfuls of kale
4-6 handfuls of spinach
1/2 can of chickpeas
1/2 cup of cherry tomatoes, halved
1/4 cup of pitted olives, halved
1/2 cucumber, peeled, sliced, and halved
handful of sprouts of your choice (I used a mix of alfalfa, clover, radish, canola)
1/4 cup of walnuts
1/4 cup EVOO
1/4 balsamic vinegar
squeeze of lemon
big sprinkle of cayenne
big sprinkle of dried oregano
Combine all of the veggies and the chickpeas into a large bowl. Add dressing and top well. Top with olives and walnuts. Makes three to four servings.
